Did you know that conventionally-grown, non-organic sweet potatoes are part of the "The Fab 14" or that 5-digit PLU codes beginning with 8 signify genetically modified produce? That information is part of Tips for saving money at the grocery store. In another post, 6 surprising symptoms of dehydration, I learned that craving sugar could point to dehydration. Our featured site this week, The Daily Green which is associated with Favor the Earth, is full of interesting content. Favor the Earth is a business selling organic and Eco-friendly products. One might expect their blog to be a "sales pitch" and while they do point to their sales page as a path to finding safe products, the focus is on education. For example, in an article entitled 5 ingredients to avoid in snacks carrageenan is mentioned because it can cause intestinal distress. The post ends with a promotional offer on snacks which are safe and healthy. In another piece, I learned that inexpensive clothing can come at a high environmental and humanitarian cost ... in 2005, two thousand garment workers died in work related fires and building collapses. Again, the author doesn't leave us shaking our heads, feeling powerless ... we are directed to a company producing ethical, made-in-the-US clothing. The Daily Green will open your eyes and give you the facts necessary to make good choices. Whether you are looking for planet-friendly products or information about green living, you'll find it on this blog.

Vegan Recipe - Red Beans & Lentils

Red Beans & Lentils


This month's dish is my own creation. It is a hearty stew full of flavor and warmth ... perfect for a cool autumn supper.


Vegan Red Beans & Lentils

Ingredients
1 1/2 Cups red kidney beans
1/2 onion (small), diced
2 garlic cloves, minced
1/2 green pepper, diced
1 Cup lentils, washed
1 Can tomatoes with juice
1 heaping Tablespoon Taco Seasoning (or to your taste)
1 bay leaf
1 pinch turmeric
Chopped cilantro (optional, to your taste ... I use about 1/4 cup)
Water as needed

Vegan Red Beans and Lentils

Method
  • Sort and wash the kidney beans. Cook using a pressure cooker (cooking instructions and times can be found HERE). Allow the pressure cooker to release naturally (quick release methods will break the beans). If you don't want to use a pressure cooker, you can cook the beans using this METHOD (allow an extra 2 1/2 hours). If you prefer to use canned beans, rinse them and set aside.
  • While the beans are cooking, sauté' the onions, garlic and green pepper in a little water for about 10 minutes (onions should look translucent).
  • Add the lentils and remaining ingredients. Cover with water. Bring to a boil, reduce the heat and gently simmer for 20 minutes.
  • Add in the red beans and enough water to cover (more if you prefer a more soupy consistency).
  • Cook for an additional 15 minutes.
  • Adjust seasoning and serve.

Notes

  • I prefer to cook beans using a pressure cooker. If you haven't tried it, I encourage you do so. It takes minutes (rather than hours), reducing the amount of energy required.
  • Soaking beans improves their nutrition, digestibility and texture. I recommend soaking them for 24 hours but any amount of soaking time will benefit them. If you don't have time to soak them, simply cook them until done.
  • While canned beans will work in this recipe, I encourage you to buy dried beans ... the flavor is better and you control the texture and ingredients. If you do use canned beans, be sure to rinse them well to get rid of added sodium and/or preservatives.
  • If you don't like lentils, substitute textured soy protein. To prepare the protein for use, "wash" it (cover with water to hydrate, then drain off the water and squeeze out any moisture). Wash three times and then use in place of the lentils.

Change The World Wednesday (#CTWW) - Clean

Welcome to Change The World Wednesday (#CTWW)!

Certain times of year seem to beg us to take action. In the spring we clean, in the summer we grow and preserve food, and in autumn we get ready for the cold months of winter. Winter preparations include checking appliances and making sure that they operate efficiently so that when energy demands are highest, we can be confident that we are minimizing our use. With that in mind, we headed into our kitchens last week and gave our refrigerators some TLC. Vacuuming the coils (if your appliance has them), checking the door seals and making sure that cool air circulates properly ensures efficient operation ... and that saves energy!

The Honor Society are those people who help us spread the "green" word by writing an article about our challenges and/or leaving pertinent comments.

Welcome back to Katie! She wrote To Fan or Not To Fan [#CTWW] and shares the results of her inventory. Can you guess how many ceiling fans she has in her home?

Melanie joined us ... Welcome, Melanie! She talked about the ceiling fan and hair removal challenges in Change the World Wednesday Challenge - Ceiling Fan. Unlike many of us, her area actually had hot weather ... weather worthy of air conditioning. But instead of turning on the A/C, Melanie employed two techniques: 1) she used ceiling fans and 2) she adjusted her windows to allow cool air in during the early morning and late evening hours. For the hair removal activity, she offered a clever tip to increase the life of a razor. It involves denim!

As for me, I'm still preserving - waiting for the last dash of autumn sun to red up my green sweet peppers and my sweet potatoes in the raised beds are now under window glass to keep them insulated til late October when I'll harvest them. Soon, I'll be changing my furnace filter as I do each fall, turning off the water supply to the outdoor faucets, and planting cover crop in the garden beds. :) "

Argentum Vulgaris thought he'd be tackling some of our spring tips but the weather in Brazil had other plans. In Change the World Wednesday – 25th Sept you'll find out why he took on our autumn activity (even though he's moving into spring) and how his psychic abilities helped him meet this week's challenge.

Mrs. Green's refrigerator is in fine shape so she chose to browse our autumn tips and tackle another activity. One caught her eye ... something she's been meaning to do for years (yep, years). So this week, she took it on. In Preparing our home for winter the green way you'll find out what she decided to do and you'll see pictures of a very creative experiment. Want a hint ... it involves space blankets.

When I read Lois' post, Change the World Wednesday, TLC, I thought that the idea of tender loving care was appropriate ... not for a refrigerator (because she doesn't have one), but for Lois, herself! She was having "one of those weeks". Hopefully her new look and a cup of tea helped lift her spirits! She found something on our autumn list and accomplished the task! My Final Thoughts:

"A stitch in time saves nine" ... or, in others words, a timely effort will prevent more work later. That phrase seems to be especially appropriate as we prepare for winter. In an environmental sense, it reminds us that regular maintenance ensures that our appliances work well, preventing wasted energy and higher bills. A little effort now equals efficient operation later.
